Inspirational day for Pagham chef

A Pagham chef has been busy taking part in a special training day with Ainsley Harriott.

Colm Penfold, who works at Acorn Court care home in Surrey, took part in a very special training day in London with the celebrity chef.

Ainsley launched a Food Challenge for the care home where Colm works and other homes in its group, aimed at inspiring its chefs to come up with a new, creative and innovative dining experience for its residents.

Ainsley spent time with Colm and his colleague Parveen Peter, demonstrating some of his recipes and sharing his top tips.

Ainsley said: “It’s great to see Acorn Court care home investing in this competition and I know that Colm and Parveen will embrace the challenge ahead and produce a fabulous new menu idea for the residents”.

Colm’s menu idea will be presented at a community event at the home in early October. If the menu idea is shortlisted in the Food Challenge the home will receive a visit from Ainsley in October to receive the prize.

Colm said: “This was such an exciting opportunity and Ainsley has been incredibly inspiring today. Learning from him has given me many ideas to take back to Acorn Court and develop into our winning idea. Sharing ideas and learning with the other chefs has been a really valuable experience. Ainsley’s Three Cup Chicken dish is something I will cook for our residents and his Caribbean Bouillabaisse was a real treat.”
